I have so many tomatoes coming out of the garden right now.  I planted three better boy plants, two cherry tomatoes, and one german johnson.  I've had tomato sandwiches, salads loaded down with tomatoes, homemade salsa, in addition to gifting tomatoes to co-workers, family, and friends. 

This week we had Chicken and Tomatoes with mashed potatoes.  This was excellent!!  The tomatoes were the star of the show. 

Chicken and Tomatoes

3 boneless skinless chicken breast
8 cloves of garlic, minced
2 Tablespoons olive oil
3 Tablespoons fresh minced rosemary
Salt and pepper
4 Tablespoons honey
20-25 cherry tomatoes, halved

Preheat oven to 425 degrees.  Spray a 9x13 dish with Pam.  Mix the olive oil and minced garlic, spread out in the bottom of the dish, and bake for 5 minutes.  Season chicken with salt and pepper and lay on top of the garlic.  Drizzle honey over chicken breast and sprinkle the rosemary.  Add tomatoes to dish and bake for 30 minutes or until the chicken is cooked through, basting the chicken at least twice during this time.
