I went to a cookout the other weekend and one of the guys had made a pasta casserole as his contribution.  It was delicious so of course, I asked for the recipe.  He told me how he made it as a side, but also suggested a change to make it a main dish.  I went with his meat addition, made a couple of other small changes, and made it for dinner a couple of nights later.  It was great!!

Sausage Pasta Casserole

1 pound hot sausage
1 pound macaroni pasta shells
28 oz. petite diced tomatoes
14 oz. petite diced tomatoes with garlic and olive oil
8 oz. velveeta cheese, cubed
1/3 stick of better, cubed

Cook and crumble sausage until cooked through.  Lay on papertowels to drain grease.  Boil pasta shells until al dente, according to package directions, and drain.  In a large casserole, mix together all ingredients.  Bake uncovered on 350 degrees for 30 to 45 minutes until hot, bubbling, and cheese has melted.
